Why is there crystallisation in my dates?

Due to the naturally high sugar level of Medjool dates they undergo a natural sugar crystallisation process. This forms under the surface of the date which you'll notice in lighter patches and above the surface in a spotty spore like look. It doesn't make them look as good but rest assured this is part of the nature of the product and doesn't indicate spoilage.  
 
This crystallisation is more common during the cooler months as these sugars tend to "melt" and go unnoticed during the warmer summer months, but in winter solidify and become more noticeable. The product should be perfectly fine to use and this has been verified with the supplier.
